I love this time of the year: The cool weather and of course pumpkin season, which was the inspiration to my breakfast this morning. This recipe was adapted from by the pumpkin protein pancakes at PbFingers.com.
Pumpkin Protein Pancakes
– 1/2 cup oats (i use gluten free)
– 1/4 cup pumpkin
– 1/4 cup cottage cheese (i used fat free)
– 1 egg
– 2-3 tblsp milk of choice
– 1/2 tsp pumpkin pie spice
1-2 tsp of sweetener of choice (agave or honey)
– pinch of salt
Combine all ingredients in a blender or magic bullet until well blended. Heat pancakes on a nonstick skillet. I make it into 2 large pancakes, and top it with a half of banana or berries, and a drizzle of honey.
